52 Weeks of Pinterest: Week 42 – Pumpkin Roll!

This year I wanted to go with a resolution I would have no problem sticking to! Then as I was pinning an item on Pinterest, a light bulb flashed on above my head. Ok, maybe not literally, but this great idea popped into my head. Those of us who are Pinterest users know that we pin hundreds of things a week, but do we ever do them? So I decided this year I would do one of my pins every week. At the moment, 52 weeks of Pinterest was born. Each week I will do something I found on Pinterest rather it be a craft, new recipe, organizing technique, or whatever!

This week it’s a Pumpkin Roll!

What You Will Need:

Pumpkin Roll

3 Eggs
1 Cup Sugar
1 Tsp Cinnamon
â…” Cup Pumpkin (Like Libby’s)
¾ Cup Flour
1 Tsp Baking Soda
1 Tsp Lemon Juice
1 Tsp Ginger
½ Tsp Salt
Cooking Spray (like Pam)

Filling

2 Tbsp Butter
8 oz. Softened Cream Cheese
1 Cup Powder Sugar (Make your own HERE!)
2 Tsp Vanilla

First thing you need to do is beat your eggs for 5 minutes. I know. The hardest part of the recipe right away.

Once you have your eggs beat, add in your remaining ingredients. Mix together completely.

Get a large pan or cookie sheet with raised edges and spray down with cooking spray. Pour your Pumpkin Mix in and spread out.

Once oven is heated to  375°F, place pan in for 10-15 minutes or until your mixture begins to look like a sponge.

Remove from oven and let cool for just a minute. Take pan and flip it over dropping the pumpkin “cake” on to clean towel or cheese cloth covered in powdered sugar.

Let cool. Once cool, spread your cream cheese filling on the cake.

Once you have spread your cream cheese filling out it’s time to make the roll.

You can use the towel or the cheese cloth for assistance in rolling it. Just grab one end of the towel and start rolling the cake.

You should now have a Pumpkin Roll!

To store, wrap your roll in wax paper and then tin foil. Place in refrigerator to store.

A pumpkin roll is a delicious dessert for the cool Fall weather.

If you can’t wait to try it out, cut it right away and dish it up. You won’t be sorry. 🙂

Though there are a few processes, this dessert only takes about 30 minutes to make from start to finish. My mother makes them all the time, even in Spring! They are really awesome for the Turkey Day table too. 🙂
