Apple Bundt Cake


Yum!  This is a tasty treat that my son and I devoured.  It was one of those lucky weeks for him too, as I let him have it for breakfast!  Hey, its just about as full of sugar as having pancakes with syrup or sweet crepes, so every now and again, its fun to let him have a special treat for breakfast…who didn’t have pie the morning after Thanksgiving???  My Mom used to make this as an after school alternative to the milk and cookies.  If you like apples and coffee cake, you will, or most likely will, enjoy this.

Serves 8-10 for about

1/2 cup oil

1/2 cup applesauce

2 cups sugar

2 eggs

3 cups flour

1 tsp. baking soda

2 tsp. cinnamon

1 tsp. salt

3-4 cups peeled, diced apples

powdered sugar

Mix together all ingredients, except powdered sugar.

Pour into a greased bundt pan.

Bake at 350 degrees for 45-50 minutes.

Let cool and dust with powdered sugar.
