Baked Artichoke Chicken

So a while back I pinned a recipe from Pinterest for Artichoke chicken.  Then when I planned to make it, I realized I was missing more than 1 of the ingredients.  I quickly hopped back online, about and hour before we had planned to eat, to see if I could find another artichoke chicken recipe, and I found this one. I just tweaked a little bit, and that recipe is what is listed below.  It was really good, though next time I will probably only use 1/4 cup of mayonnaise, as I don’t think it needed that much, but if you love mayo, no need to change it!

The best part, is it only took about 45 minutes to prepare and cook.  We enjoyed the chicken with some herbed couscous and steamed cabbage.

Serves 4-6 for about $1.00

INGREDIENTS:

4 boneless skinless chicken breasts – (about $3.50)

1 (12 oz.) jar marinated artichoke hearts – ($2.48)

3/4 cup grated parmesan cheese

3/4 cup mayonnaise

1 tsp. garlic powder

dash of paprika

1 tsp. onion powder

salt and pepper to taste

DIRECTIONS:

Preheat oven to 375.  Place chicken in greased casserole dish.

Combine all other ingredients in a small bowl.

Place equal amounts on all 4 chicken breasts.  Bake at 375 degrees for 30 minutes.
