Asian Chicken Noodle Soup

I love chicken noodle soup, and not only when I am sick.  I just like soup!  This recipe is a nice twist on a traditional comfort food.  A soup the whole family will love!  With lots of colorful veggies, and a nice and tasty Asian inspired broth, this is a good dish anytime of the year.  It is also super quick and easy to make, takes about 10 minutes to prepare, and 20 minutes to cook.

Note: The ingredients shown below are for a double batch of soup

INGREDIENTS:

3 1/2 cups chicken broth

1 tsp. soy sauce

1 tsp. ginger

dash or black pepper

1 medium carrot, diagonally sliced

1 stalk celery, diagonally sliced

1/2 red bell pepper, cut into long strips

2 green onions, sliced

1 clove garlic minced

1/2 cup Asian noodles of choice

1 cup cooked chicken, chopped

DIRECTIONS:

Heat all ingredients, except the chicken and noodles, in a large soup pot over medium high heat and bring to a boil.

Lower temperature to medium heat, and add chicken and noodles.  Cook until noodles and chicken are heated through, about 8-10 minutes.
