1/2 teaspoon salt
1/2 cup shortening
3 tablespoons cold water
1-1/4 cups sugar
1/4 cup cornstarch
3 tablespoons all-purpose flour
1/4 teaspoon salt
1-1/2 cups water
3 egg yolks, lightly beaten
2 tablespoons butter
1-1/2 teaspoons grated lemon peel
1/3 cup lemon juice
1/2 cup sugar, divided
1 tablespoon cornstarch
1/2 cup cold water
4 egg whites
3/4 teaspoon vanilla extract


2. Lemon Meringue Cupcakes

1 1/2 cups King Arthur Unbleached Cake Flour Blend
1 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon baking soda
2/3 cup sugar
1/3 cup butter, room temperature
1 large egg, room temperature
1/2 teaspoon vanilla extract
1/2 teaspoon Buttery Sweet Dough Flavor (optional, but adds that signature bakery taste)
2/3 cup buttermilk
lemon curd
one batch Easy Microwave Lemon Curd
3 large egg whites
1/4 teaspoon Bakewell Cream or cream of tartar
1/8 teaspoon salt
6 tablespoons sugar

5 eggs, 4 separated
2 tsp water
Finely grated zest and juice of 4 lemons
2 Tbsp cornflour
400g caster sugar
1 tsp cream of tartar
Extra 100ml water

1 (8 inch) pre-baked pie shell, or crumb crust
3 egg yolks
1 teaspoon grated lemon zest
1/2 cup lemon juice
1 (14 oz) can sweetened condensed milk
3 egg whites
1/4 teaspoon cream of tartar
1/4 cup sugar

Pastry Crust:
1 1/4 cup almond flour
2 tbsp coconut flour
2 tbsp arrowroot starch (OR 2 tbsp oat fiber, for THM)
1 tbsp granulated Swerve Sweetener
1 tsp xanthan gum
1/4 tsp salt
5 tbsp butter, chilled and cut into small pieces
2-4 tbsp ice water

1 cup plus 2 tbsp water, divided
1 cup granulated Swerve Sweetener
2 tsp lemon zest
1/4 tsp salt
4 large egg yolks
1/3 cup lemon juice
3 tbsp butter
1/2 tsp xanthan gum
1 tbsp grassfed gelatin (can use 1/2 envelope Knox gelatin)

Meringue Topping:
4 large egg whites
1/4 tsp cream of tartar
Pinch salt
1/4 cup powdered Swerve Sweetener
1/4 cup granulated Swerve Sweetener
1/2 tsp vanilla extract
