Ingredients:

200g Creamed coconut2.1/4 Pint boiling water
2tbsp of the boiling water
800g Self raising flour
100g Cocoa powder
10ml Baking powder
100g Roasted pecans
300g Light muscovado sugar
420ml Vegetable oil
20ml Strong coffee
Fudge Icing:
100g Vegetable margarine
10ml Strong coffee
100g Cocoa powder
6tbsp Water
550g Icing sugar
A few drops of vanilla essence

Flourless Apple-Pecan Torte

Ingredients:

2 sweet red apples (6 ounces each), such as Braeburn or Jonagold, peeled, cored, and sliced 1/8 inch thick
1 tablespoon fresh lemon juice
1 tablespoon unsalted butter or nondairy margarine
3/4 cup granulated sugar
1 teaspoon ground cinnamon
2 tablespoons sweet kosher wine
Vegetable oil cooking spray, for pan
6 large eggs, room temperature, separated
1 1/4 cups toasted pecans, finely ground
1/4 cup matzo cake meal (or finely ground matzo meal)
1/2 teaspoon salt
Garnish: confectioners’ sugar

Ingredients:

7 oz bittersweet or unsweetened chocolate, chopped
10 Tbsp unsalted butter
4 eggs
½ cup sugar
2 tsp vanilla
½ tsp salt
1 cup ground pecans
2 tsp ground cinnamon
½ cup semi-sweet chocolate chips
½ cup heavy cream
24 toasted pecan halves, to decorate

Gluten Free Bittersweet Chocolate Chunk and Pecan Torte

Ingredients:

100 g (about 1 cup) pecans/walnuts, or any nut of your choice
125 g (about 1/2 cup plus 2 Tbsp ) sugar
250 g good quality bittersweet chocolate (70% to 72% cacao), coarsely chopped
Finely grated zest of 1 medium orange (optional)
1/8 tsp. salt
7 egg whites (from large eggs), about 1 cup
1/2 tsp. cream of tartar

1/4 cup cacao powder
1/4 cup coconut oil, melted

Filling :

2 cups cashews, soaked
1 1/2 cup filtered water
1 1/2 cup coconut oil, melted
1/2 cup agave nectar
1 cup fresh cranberries, chopped
3/4 cup pecans, chopped

Ganache:

1/2 cup cacao powder
1/2 cup agave
1/4 cup coconut oil, melted
