Baked Kale Chips

We got another Bountiful Basket recently, and in it was a large bunch of Kale. Typically when I get Kale, I usually throw it into a pot of soup.  In the heat of the summer, soup wasn’t really high on the list for dinner, but when I remembered that a friend likes to make Kale chips for her son, I thought it would be a perfect use of a large bunch of Kale.  Really easy to do, and with limited ingredients, we baked up a bowl of Kale chips in no time.  An easy healthy snack for the kiddos too!

INGREDIENTS:

Kale

Olive oil

Salt and Pepper

DIRECTIONS:

Wash and dry Kale.  De-stem leaves.

Roughly chop, and spread on baking sheet.

Drizzle oil over kale, and sprinkle with salt and pepper.

Bake at 400 degrees for about 20 minutes, tossing every 5-10 minutes.  Sprinkle with a bit more salt, and other seasonings if desired.

NOTE:  My husband took the rest to work in a Ziploc bag, and found that they became slightly chewy, so be sure to use them up on the same day, or maybe try storing in a brown paper bag.
