Baked Paprika Chicken

It’s always nice to find a new go to dish, and this is one of those, easy to throw together dishes.  You do have to be sure to have enough time, as it takes an hour and 15 minutes to bake, but you can prep it earlier in the day, and get it going.  I sometimes find it is easier to prep my meals in the afternoon when the kids are having some quiet time, rather than waiting til the bewitching hour when everyone wants your attention, and you are just trying to get dinner going to feed those hungry mouths!  This chicken is super moist, and goes great with pasta, or as leftovers in a green salad.

Serves 4 for about $1.00/serving

1/4 cup flour

1/2 cup grated cheese

2 tsp. paprika

1/2 tsp. salt

1/2 tsp. pepper

1 egg; beaten – ($0.10)

2 Tbsp. milk

4 boneless skinless chicken breast halves – ($4)

1/4 cup butter, melted – ($0.50)

Preheat oven to 350 degrees.  Grease baking dish.  Combine first 5 ingredients.

Whisk egg and milk together.

Dip chicken in egg, then dredge in flour mixture.

Place in dish and pour butter over.  Bake 1 hour 15 minutes until cheese has browned and chicken has cooked through.
