Basic Rolls


This is another of my Mom’s recipes.  A fairly easy, and straightforward roll recipe.  Though I am one that has had a constant battle with yeast, I try these every now and again.  Sometimes they turn out great, other times not so much.  There is definitely a science to using yeast, and I have not mastered it yet.   This time at least, the rolls did turn out fairly decent, enough so to continue to try them again here in the near future.

Makes about 24 rolls for pennies!

2 Tbsp. active dry yeast

1/2 cup sugar

1/2 cup shortening

1/2 cup milk

2 tsp. salt

4 1/2 -5 cups flour (I used about 1 cup of whole wheat flour and the rest white flour)

3 eggs

1/2 cup warm water

Soften yeast in water.

In saucepan combine sugar, shortening, milk and salt.  Heat stirring until sugar dissolves.

Place in large bowl.  Cool to lukewarm; stir in 1 1/2 cups flour, beat well.

Add yeast and eggs; beat thoroughly until smooth.

Stir in enough flour to make a stiff dough.  Knead on floured surface until smooth and elastic; 5-8 minutes.  Shape into a ball; cover and let rise until doubled 1 – 1 1/2 hours.  Punch dough down; place on floured surface; cover and let rise 10 minutes.

Shape into rolls.  Cover and let rise 1 hour.

Bake at 400 degrees until lightly browned, about 8-10 minutes.

  2. Oh good Sandra, glad I am not to only one!! My SIL made some amazing rolls for Thanksgiving, and she said they were super easy. I will get the recipe from her here soon, and attempt to try them again…if they work, I will post!!
