S’mores Blondies

I have  always enjoyed a good chocolate brownie.  In fact, it is one of my favorite desserts.  My husband and I actually had a brownie sundae bar at our wedding rather than having a cake…that’s how much we enjoy brownies!  But now and again, you want something a bit different.  Enter the Blonde Brownie.  Normally I just add some coconut for that little something extra, but I have seen quite a few recipes out there recently for S’mores treats, without the campfire, and I thought that the Blonde Brownie could be transformed to have that same twist.  So this time I added some milk chocolate chips and mini-marshmallows, and voila…the S’mores Blondie!  These are super ooey gooey, and excellent on their own, but also great with a scoop of vanilla ice cream on top…yum!

Serves 12 for about $0.18/bar

INGREDIENTS:

Note: This is for a double batch

1/2 cup oil

2 cups brown sugar

2 tsp. vanilla

2 eggs – ($0.10)

1 1/2 cups flour

2 tsp. baking powder

1 tsp. salt

1 cup milk chocolate chips – ($0.94)

1 cup mini marshmallows – ($0.17)

DIRECTIONS:

Mix together all ingredients except chocolate chips and marshmallows.

Rather than a typical brownie batter, this is a bit thicker.

Mix in chocolate chips and marshmallows.

Spread in 9×13 pan.  Bake at 350 degrees for about 25-30 minutes, or until lightly browned.
