Banana Blueberry Muffins


One of the kids favorite things to make when our bananas are too ripe to eat, are muffins.  Muffins are great, as they work for breakfast, an easy snack, or great for lunches too!  We usually freeze about half, and then use them as we need them.  A favorite recipe is the Banana Blueberry Muffins out of my Favorite Brand Name Muffin Collection cookbook.  Easy and tasty!

Makes 12 muffins for about $0.20/muffin

2 extra ripe, medium bananas, peeled – ($0.54)

2 eggs – ($0.20)

1 cup packed brown sugar

1/2 cup butter, melted and cooled – ($0.50)

1 cup blueberries – ($1.00)

1 tsp. vanilla

2 1/4 cups flour

2 tsp. baking powder

1/2 tsp. cinnamon

1/2 tsp. salt


Preheat oven to 350 degrees.  Grease 12 muffin cups.

Puree bananas.

Combine bananas, eggs, brown sugar and butter in mixer until well blended.


Stir in blueberries and vanilla.

Combine flour, baking powder, cinnamon and salt in separate bowl.

Stir into banana mixture until flour is just incorporated.

Spoon evenly into muffin cups.

Bake 25-30 minutes or until toothpick comes out clean.
