Chicken Caesar Sandwiches – Crock Pot

If you have read many of my dinner posts, you know how much I love easy crock pot meals.  You can do so much with a one, it probably is my favorite kitchen appliance!  This night I made these sandwiches, which were so easy, and the meat would be great on a salad too, cold or warm.  The pretzel roll seems to be all the rage these days, and they went great with the chicken.  It would probably be good on any sort of bread or bun, whatever you prefer.

Serves 4-6 for about $1.50/serving (depending on the buns you use)

INGREDIENTS:

3-4 boneless, skinless chicken breast – $3-4
3/4 cup Caesar salad dressing – $0.66
1/2 cup shredded Parmesan cheese
1/4 cup fresh chopped parsley or 2 teaspoons of dried parsley
1/2 teaspoon ground pepper
2 cups shredded romaine lettuce (optional)
12 slider buns or 4-6 regular sized hamburger buns – $3.48

DIRECTIONS:

Place chicken in a 3-4 quart slow cooker with 1-2 cups of water, cover and cook on low heat for 4-6 hours.

Remove chicken from cooker to a medium sized bowl, and drain the water from the slow cooker.

Pull chicken into shreds, discarding any fat.

Place chicken back in the cooker and pour dressing, Parmesan cheese, parsley, and pepper over the top. Stir until mixed evenly. Cover and cook on high heat for 30 minutes or until mixture is hot.

Spoon 1/4 cup mixture onto each slider bun if you are making sliders or more for regular sized buns. Top with extra shredded Parmesan cheese and lettuce to serve.
