Chinese Rice

Another favorite from growing up, I loved it when my Mom would make this quick and easy Chinese Rice dish.  Sometimes we eat it as the main dish, and add some egg rolls, potstickers and a fruit for our sides.  It’s also a great dish to make when you have company, as rice is very inexpensive, and you can adjust the recipe to suit your needs.  We often pair it with the Sweet and Sour Chicken that we posted yesterday.

Serves 6-8 for about $0.50/serving

INGREDIENTS:

2 cups cooked white or brown rice

2-3 stalks celery, cut on angle

3-4 green onions, sliced thin – ($0.24)

4-5 scrambled eggs – ($0.40-50)

soy sauce to taste

bacon bits or cooked crumbled bacon – ($0.74)

parsley (optional)

salt and pepper to taste

DIRECTIONS:

Cook your rice according to package directions.  Meanwhile, in a large fry pan, sauté green onion and celery in 1 Tbsp. oil, or in the bacon grease if you are using and cooking bacon, and also cook your scrambled eggs and set aside.  When rice and eggs are done cooking, add to the large fry pan, and combine with soy sauce, salt and pepper, bacon and parsley, and heat until warmed through.
