Chorizo Cheese Dip

Another one of my brother’s tasty concoctions!  I wish I could just cook like he does.  He comes up with interesting flavor combinations, and they always seem to taste great.  I am great at following a recipe, and then changing it up a bit, but have a hard time just winging it sometimes.  This cheesy chip dip he helped me whip up for the Super Bowl, was super tasty!!  And it would be great for any entertaining you may be doing.  Cheesy, spicy, and oh so yummy!!

Serves 8-10 for about $0.65/serving

INGREDIENTS:

1 large onion, chopped – $0.33

4 slices bacon, cooked and crisped up – $0.99

3 cloves garlic, minced

Paprika, to taste

Pepper, to taste

1/2 tube Pork Chorizo – $0.98

2 pkgs. cream cheese – $1.96

4-5 green onions, sliced – $0.58

4-6 slices Provolone cheese, in small pieces – $1.36

Milk, for getting to desired consistency

Dice your onion, while you cook your bacon.

When bacon is cooked and crisp, remove from pan to paper towel lined plate, and add onions.  Cook on Medium heat.

Sprinkle onions with paprika and pepper.

Cook down onions until soft and transparent.  Make a well in the onions, and add minced garlic and saute for a bit, then incorporate into onions.

Add Chorizo to the onions, and cook through, mixing into onion and garlic.

Cook down for about 5 minutes.

When Chorizo is cooked, add in both blocks of cream cheese.

Break up blocks and incorporate into Chorizo mixture.

Cook down until completely incorporated.  Turn heat down to Medium low.

Stir in about 2-3 Tbsp of milk, and mix into cheese dip.  Stirring well to combine.

Tear up provolone slices.

Add provolone to the pan, and stir well until melted and incorporated.

It will get pretty thick and elastic, so you will need to add a bit more milk to get to your desired consistency.

This time add in about 1/4 – 1/2 cup milk.

Continue adding milk until you reach a dip like consistency.

Spread out in a small baking dish.

Sprinkle with bacon crumbles.

Bake in a 350 degree oven for about 15-20 minutes.

Garnish with green onions.  Serve with tortilla chips.
