Claudia’s Pickled Onions

My aunt made these onions while we were all recently together.  She literally threw them together just for lunch, and they were excellent…and SO easy!!  My husband was in love, and I had to get the recipe so I could make some for him.  They are great in salads, sandwiches, burgers, etc.

Makes about 1 quart jar for roughly $3.15

3 Red onions – ($1.15)

Seasoned rice vinegar – ($1.98)

Cut onion in half.  Slice into thin slices.

Separate onion slices and place in glass jar with a tight screw on lid.

Pour vinegar over onions until onions are almost covered.  Push down until mostly covered.  Refrigerate.  Ready to go after about 20 minutes, but the longer they can pickle the better.
