Comfort Food that is GOOD for your waistline and your wallet!

This is ony of my favorite “comfort foods”. But, it promises to bring you all the comfort for not a ton of calories, in fact this recipe makes 4 servings, and each serving (3 chicken fingers) is only 4 Weight Watchers Points. So, enjoy and don’t feel guilty. This is a great recipe to make in a large batch and then freeze for another day when you need a little comfort food…

Homemade Chicken Fingers

2-3 chicken breasts, cut into 1 inch slices (or use chicken tenders)
1 cup buttermilk
1 cup crushed cornflakes
1/2 cup seasoned bread crumbs
1 teaspoon onion powder
1 teaspoon dry mustard
1 teaspoon paprika
1 Tablespoon vegetable oil

Combine chicken and buttermilk in a bowl. Cover and chill 30 minutes. Drain chicken, discarding buttermilk.

Combine cornflakes, bread crumbs, onion powder and paprika in a large Ziploc bag. Add chicken strips and shake to coat.

Spread oil on a cookie sheet. Arrange coated chicken on the pan in a single layer. Spray chicken with cooking spray (this will help make them crispy like they were actually fried!) Bake at 400 degrees about 20 minutes. Can flip halfway through to evenly brown and crisp the chicken. Serve with your favorite honey mustard or BBQ sauce.

$0.10- corn flakes (estimate for 1 cup crushed from a box I bought with doule coupons in the Kelloggs cereal promo at Albies last week)

$0.25- seasonings and oil from pantry (estimate)
FREE- BBQ sauce and French’s Honey Mustard sauce (mustard was purchased at Albie’s in the last couple of weeks using double coupons…)
FREE- corn on the cob to go with my down home comfort food (When I bought the Corn Flakes with a touch of honey last week in the Kellogs promo there was a $1 peelie on the box to get some free produce. I used a doubler and got $2 of free produce)
FREE- Cherries my friend Angie hand-picked for me (thank you very much!)

TOTAL: $3.03 for a complete meal for my family
