Cottage Cheese Rolls


Over 23 years ago when my Mom married my Step-Dad, we all married in to new traditions, different places to spend the holidays, and new recipes.  One of our favorites from “marrying” in, are my Grandma’s Cottage Cheese Rolls.  My cousins have dubbed them “Happy Rolls”.  They are amazingly good, but SO not good for you.  We typically have them only on special occasions, like Thanksgiving, Christmas or Easter.

I was wanting some fresh rolls the other night with my hot soup, and yeast is not always my best friend, so I went with these bad boys.  Super easy, tasty and they sure do make you happy!

Makes 64 rolls for about $0.09/roll

3 cubes butter, softened – ($1.50)

4 cups flour

4 cups cottage cheese – ($4.30)

Mix all ingredients together well.  Cover and refrigerate for a couple of hours.  Preheat oven to 375 degrees.

Lightly flour counter space, and separate dough into 8 balls.

Roll out a ball of dough until about 1/4 inch thick.

Cut like a pizza, into 8 triangle shapes.  Roll up like crescent rolls.

Place on lightly greased cookie sheet.


Bake for 20-25 minutes or until lightly browned.

Freeze or refrigerate leftover rolls.  They reheat up well.



  1. How much is a butter cube? I don’t have these in my area. Looks like it might be a half cup, which would make it 1 1/2 cups butter.

  2. Yes, 1 cube of butter equals 1/2 cup. So you will need 1 1/2 cups butter. Enjoy!!
