Creamy Garlic Pasta


Oh man, this was amazing, and SUPER easy!!  My husband is not a huge pasta eater, and he ate 3 servings!!  No leftovers that night!  I had pinned this months ago, and the other night, really did NOT feel like cooking.  Some days I just get tired of it, and having to think of things that everyone will eat, and being certain we have the ingredients, etc.  I looked up my Recipe board on pinterest, and I had all these ingredients, it was fast and easy, and that is what I made…and I will be making it again VERY soon!!  I was actually about to make it for lunch the next day (since hubby ate so much, we had no leftovers), it was that good!!

Serves 4 for less than $3.00

2 tsp olive oil
4 cloves garlic, minced
2 tbsp butter
¼  tsp salt
½ tsp pepper
3 cups chicken broth – ($1.02)
½ lb angel hair pasta – ($0.98)
1 cup grated Parmesan cheese
¾ cup heavy cream
2 tbsp chopped fresh parsley (I used spinach flakes as I did not have parsley)

In a pot, bring the olive oil to medium-low heat. Add the garlic and stir, allowing it to cook for 1-2 minutes. Mix in the butter until melted.

Add the salt, pepper and chicken stock. Raise the heat to high and let it come to a boil. Once it is at a rolling boil, add the pasta and cook for as long as the box’s directions indicate.

Reduce the stove to medium heat and mix in the Parmesan until completely melted.

 Turn off the heat and stir in the cream and parsley. Serve immediately.
