Crepes

Yum, one of our all time favorite things to have for breakfast, especially when we have fresh berries and whipped cream to go in them!  Crepes can seem intimidating, but after trying them a few times, they become just as easy as regular pancakes, if not easier!  These make for a wonderful breakfast, or a fun, build your own dessert bar…or even “breakfast for dinner”, ha!  Sometimes we will just sprinkle a little powdered sugar and lemon juice, or even just maple syrup on them, and they are fabulous.  Give them a shot, you will see you can make something fancy for breakfast too!  Would also make for a fun breakfast on the 4th of July, just add in some blueberries with your red berries and whipped cream…kids would love it!

Makes 12-14 crepes for about $1.00

INGREDIENTS:

1 1/2 cups flour

1 Tbsp. sugar

1/2 tsp. baking powder

1/2 tsp. salt

2 cups milk – ($0.25)

2 Tbsp. melted butter – ($0.13)

1/2 tsp. vanilla

2 eggs – ($0.20)

DIRECTIONS:

Add all ingredients to a medium size bowl and mix well with a wire whisk or hand beater.

 Add 1/4 cup of batter to a skillet on medium low.

Pick up skillet, and move around to spread batter out in pan.

Cook until dried around the edges.

Flip, and brown on the other side.

I keep my crepes on a plate set in the microwave to stay warm until they are ready to be served.
