Crock Pot Chicken Noodle Soup

You have got to love, easy, comforting, healthy dishes, and this one was perfect!  Who doesn’t like homemade chicken noodle soup??  I like it even more when I can throw everything in the crock pot, and enjoy it later for dinner, with little to no dinner time prep.  Give it a shot, it was a tasty recipe with the little hint of ginger.

Serves 6-8 for about $0.90/serving

INGREDIENTS:

1 1/2 cups carrots, chopped

2 ribs celery, chopped

1 medium cooking onion, peeled and sliced (in large pieces so picky eaters can easily pick them out)

2 slices ginger (approx. 1/4 inch thick each), peeled

2-3 stocks fresh rosemary
6 boneless, skinless chicken thighs
1 can chicken broth
1 cup white wine (optional…I added extra chicken broth)
Coarse salt and ground pepper to taste
2 cups egg noodles
DIRECTIONS:
Spray crock pot with non-stick spray.

Add carrots, celery, onion, ginger and rosemary.

Arrange chicken on top of vegetables.

Add broth, salt and pepper.  Cook on low for 8 hours.

Shred chicken with two forks while in the pot.  Add noodles and cook on high for 20-30 minutes.
