Crock Pot Italian Chicken

Think tangy, spicy chicken salad.  This is tasty!!  It was also super simple.  We had it again another night when we were visiting some friends, but they used pork instead…both ways were great, and nice to have such a versatile recipe.  Try it, would be a good one for a summer picnic too.

Serves 8-10 for about $0.75/serving

INGREDIENTS:

2 lbs of chicken, what ever you prefer, I used tenders – $4-5

1 – 12 oz jar of pepper rings

2 –  .7 ounce envelopes of Italian Salad Dressing and Spice Mix (I only had one, and it was just fine)

Put chicken in the bottom of a crock pot. Pour pepper rings with juice over chicken. Sprinkle Italian mix over chicken. Cook on low for 8+ hours or on high for 4+ hours.  After chicken has cooked, shred. Keep on low till ready to eat. Add chicken broth or water if chicken seems to be drying out.  Serve on Hawaiian bread, brioche or ciabatta buns.
