Crock Pot Lasagna

Yum, this turned out great!!!  I normally purchase the frozen lasagnas at Costco, as making them can be so labor intensive, and expensive.  So when I heard about making it in a crock pot, I was very skeptical at first, until a friend said she had tried a recipe for one, and it came out fabulous.  This was super easy, and I will be making it again for sure.

Serves 6-8 for about $1.45/serving

INGREDIENTS:

1 lb ground beef – $2.98

1 medium onion, chopped – $0.33

2 garlic cloves, minced

1 (29 ounce) can tomato sauce – $1.12

1 cup water

1 (6 ounce) can tomato paste – $0.38

1 tsp.  salt

1 tsp. dried oregano

1 tsp. dried basil

8 ounces lasagna noodles, uncooked – $0.49

4 cups mozzarella cheese, shredded (reserve 1/2 cup) – $4.00

1 1/2 cups small curd cottage cheese – $2.18

1/2 cup parmesan cheese, grated

DIRECTIONS:

 Brown beef, add onion and garlic – cook until onion is softened.

 Stir in tomato sauce, water, tomato paste, salt and oregano – mix well.

 Spread one fourth of the meat sauce in an ungreased slow cooker.   Arrange one third of the noodles over the sauce.

Combine the cheeses.

Spoon one third of the cheese mixture over the noodles.

 Repeat layers tw0 – three times.

Top with remaining meat sauce and reserved cheese.

 Cover and cook on low 4-5 hours.
