Crock Pot Refried Beans

I have always enjoyed good authentic Mexican Food.  Nothing beats some good rice and beans and a little cheese, with some tasty tortilla chips.  For Cinco de Mayo this year we made some refried beans in the crock pot.  Easy to do, cheap, and no lard!  They even taste pretty darn authentic.  We enjoyed our beans as a side with taquitos, rice and a nice green salad.  Yum!  Another great thing about these beans, is that they make quite a bit, and freeze really well, so it’s easy to make a large pot, and save some for later.  Plus it is very cost effective too.

Serves 18-20 for about $0.15/serving

INGREDIENTS:

2 lbs. Pinto Beans – ($1.98)

1 large onion, diced – ($0.33)

8 cloves garlic, minced – ($0.48)

3 Tbsp. cumin

1/2 Tbsp. dried oregano

sprinkle of cayenne

12 cups water

4 tsp. salt

DIRECTIONS:

Add everything to the crock pot except water and salt.

Stir in water.  Cook on High for 5-6 hours in crock pot.

When beans are cooked, ladle out 4 cups of water.

Stir in salt.

Mash beans until you reach desired texture and consistency.
