Dinner on a Dime: Crock Pot Buffalo Ranch Chicken Biscuits

These last few weeks I have been hitting the gym twice a day, once at 4am and once at 4pm. I spend an hour each time, so when we (the husband and kis go too) get home at 5pm I come straight in to the kitchen to get dinner going! So, this week I have been utilizing my crock pot more! It is pretty much one of the best inventions for busy moms (or the cooking daddy!)

I have used my crock pot with (2) meals this week! I was craving some spicy food so when I opened my pantry and saw a bottle of hot sauce, I planned my dinner around it! 🙂 So, what did I make for dinner, on a dime?

Crock Pot Buffalo Ranch Chicken

 

 

WHAT YOU WILL NEED:

 

1 Bottle of Frank’s Red Hot (5 oz) – FREE
1 lb Boneless Frozen Chicken Breasts  $1.66
1/2 cup of Ranch Dressing - FREE This could be done with the packet, and add as little or as much ranch as you would like.
2 Tablespoons Butter  FREE
1 pack of Hawaiian Sweet Buns or your favorite biscuits

TO MAKE:

1. Place frozen chicken breasts in crock pot.
2. Pour entire bottle of Frank’s Red Hot Sauce in. *If using the PACKET ranch, pour it in now as well. If using bottled, leave it to the side for now.
3.  Set your crock pot to cook on LOW for 8hrs.
4. At about 6.5 hours into cooking time, I added the bottled Ranch dressing, if you add the ranch to soon it will curdle in little balls. (YUCK.)
5. About a half hour before serving, add the butter and shred the chicken with forks!

SERVED WITH:

Green Salad w/Tomatoes – $1.25
Knorr Baby Back Ribs Rice Sides – $.50

*** I am avoiding cheese and bread as much as I can for the time being.  We just ate the shredded chicken, HOWEVER – this would be awesome on biscuits or rolls as a sandwich. Pepper or Monterey Jack cheese will also kick the heat up some! 🙂

TOTAL COST:  $3.41

    • I get sooooo worn out! I end up napping with the kidlets during the day usually! 🙂 I treadmill it up at 4am and then doing toning stuff in the afternoon! AND it is super yummy!!!
