Dinner on a Dime: Poor Man’s Lasagna!

Well, if you have not been checking out my other posts this week, I broke my beloved crock pot on Super Bowl Sunday! So now I am having to go back to regular old cooking, but it still needs to be quick thanks to my afternoon gym visits!  First of all, let me just say that if there is hamburger out my husband thinks it is Spaghetti night! He and the kids would eat that every day of the month if they could! I however, cannot! Thanks to FabuLESSly Frugal’s awesome recipe, I found away to satisfy us all, with items found on hand – minus 1! So, are you ready to make dinner on a dime?

Poor Man’s Lasagna

  **Don’t mind my white china – the dishwasher (me) was on strike!





8 oz penne pasta  FREE
1 lb ground beef $2.23 (The recipe calls for ½ lb, but I don’t feel this is enough beef – your call though!)
16 oz cottage cheese $1.35
8 oz Cream Cheese, softened $1.98 (*GASP* Had to grab this at the store full price, we don’t use this often so I don’t keep much if any on hand.)
1 Jar Spaghetti Sauce $.39
Shredded Cheese $.35


1.  Get your water and Penne Pasta boiling.
2. Brown your ground beef, drain the grease once it is done. Pre-heat oven to 350.
3. Now that your noodles are done and drained, mix in the cottage cheese and cream cheese with the pasta.
4. Spray your 13 x 9 pan with some cooking spray. I layered my items like traditional lasagna; Pasta Mixture, Beef, Sauce (2x).
5. Top it with some shredded cheese.
6. Put in oven for 20-30 minutes.
7. Enjoy!

I like the idea that this recipe combines some of my favorite items, it is quick and easy, and most importantly – It tastes great! PLUS – absolutely kid friendly!
