Dinner on a dime – Quick & Easy Lasagna

Here is a quick and easy lasagna that anyone can make with very little effort and cheap to feed a family of six for less than a $1.75 each. total cost was $8.92 before taxes.

Ingredients:

1 Large box of Lasagna noodles (cost $1.00 on 10/$10 sale)
1lb of ground beef (cost 1.79 lb on sale)
1 can diced tomatoes (on sale 3/$1.00)
1 small onion (cost about $.30)
1/2 Lb shredded cheddar (cost $1.00)
1/2 Lb shredded mozzarella (cost $1.00)
1 Tbsp. Italian seasoning
Water
Bagged salad $3.50
Tomatoes (free from garden)
Cucumbers ( Free from garden)
Salad dressing (free with a coupon Kroger sent me)

First brown your ground beef until done, drain. Pre-heat oven to 375*, Next add tomatoes and onion (diced) cook till onion is opaque. While this is cooking mix your cheese together and add the italian seasoning to the cheese, set aside. When done place a sheet of Reynolds wrap parchment paper or the new reynolds wrap foil on one side and parchment on the other. I used the new kind and love how it cooked my lasagna and cleanup was a cinch.

Next you place a large cooking spoon full of meat on the bottom of the casserole dish and spread around , then place three uncooked lasagna noodles on top of your meat mixture side by side. You will repeat the process and add cheese mixture on top of the meat mixture before you place your next noodles. Then repeat meat, cheese and noodles. Once you have 3 or 4 noodle layers (depends on how much noodles you like) place the last layer of meat mixture and the rest of the cheese on the very top. Next you add water to the dish just enough to touch the bottom of the top noodle. Next cover with foil and place in the oven for about 1 hour and 15 mins. You can adjust time according to how you like your noodles done. Either more or less time. When it is cooked remove from oven and drain any water that has not evaporated and let set for 5 min. Serve with salad and you have a complete meal. I hope you enjoy.
