Easy Italian Chicken and Potatoes

This is such a quick and easy meal.  Another one that you could make the night before and throw in the oven an hour before dinner.  I like to have meals ready to go for the nights that I am gone at the dinner hour.  My husband can’t make much more than mac and cheese and heat up leftovers, so it is nice to have a slew of meals that he can feed the kids, with minimal prep on my part, and that I know they are all eating well.

Serves 4-6 at roughly $0.90/serving

INGREDIENTS:

4-6 raw chicken breasts ($3-4)

Italian seasoning packet ($0.57)

cube of melted butter ($0.48)

cubed red potatoes ($0.60)

green beans…or another veggie you like ($0.68)

DIRECTIONS:

Line chicken down the middle of 9×13 casserole dish.  Line potatoes on one side, and veggie on the other.

Sprinkle with seasoning packet.  Pour melted butter over the top.

Cover with foil and bake for 1 hour at 350 degrees.

    Sure, it is much “easier” to put everything in the same dish, but in order to avoid cross contamination, you should prepare & cook the 3 items in 3 separate containers.
