Double Meat Cheese Roll

Yum!  There is just something comforting about meatloaf and potatoes.  I only make this a handful of times a year, but enjoy it fully every time.  My Mom’s recipe is more of a roll than a loaf, stuffed with cheese.  When I made it this time, is I used 1 lb ground beef, and 1 lb of ground deer meat that had been mixed with bacon.  It added a nice smokey flavor, and was not gamey at all.  My husband likes to hunt, and enjoys venison, but I am not really a fan unless I mix it with ground beef, or use it in tacos, with lots of onions, etc.  This was a good way to utilize the meat in the freezer too!

Serves 6-8 for about $1.10/serving

INGREDIENTS:

2 lbs. ground beef – ($5.36)

1 egg – ($0.10)

3/4 cup cracker or bread crumbs

1/2 cup chopped onion – ($0.17)

1 – 15 oz. can tomato sauce – ($0.48)

1 tsp. salt

1/2 tsp. oregano

1/8 tsp. pepper

2 cups shredded cheddar cheese – ($1.50)

Combine beef, egg, crumbs, onion, 1/3 cup sauce, salt, oregano and pepper.

Mix well and shape into a flat rectangle on waxed paper.

Sprinkle with cheese.

Using the wax paper as an aid, roll the meat into a jelly roll.

Pinch off the ends.

Place in a casserole dish and bake at 325 degrees for 1 – 1 1/2 hours.  Drain fat if needed.

Pour remaining sauce over the top and bake for another 15 minutes.
