Double Recipes in Honor of Double Coupons

We have had SOOOO many doublers at Albertson’s lately I thought it only fitting that I give you double recipes this week. I hope you enjoy them. Leave me a comment if you try these out and like them. I also want to know what kinds of recipes you want in the future. So, dear readers, please leave a comment and let me know.

Chicken with Swiss Cheese

4-6 chicken breasts
Salt & pepper
10 oz grated swiss cheese
1 can cream of mushroom soup
8 oz sour cream
1/2 cube butter, melted
1 cup seasoned bread crumbs

Salt and pepper the chicken breasts and place in a large baking dish. Sprinkle each chicken breast with cheese. Combine soup and sour cream. Pour over chicken. Combine breadcrumbs with melted butter and sprinkle over chicken mixture.
Cover with foil and bake at 325 degrees for one hour and 25 minutes. Uncover and bake for an additional 20 minutes.

Serve with rice, noodles or your favorite veggies.

Note: If you want to have additional sauce to pour over the rice, I mix another can of cream of mushroom soup, 8 oz of sour cream and additional swiss cheese in a saucepan until cheese is melted.

Another Note: I often make this up the night before and then pop it in the fridge the next day. I think it would also freeze well UNBAKED so you could make a double batch and then have a meal for another day.

Price Breakdown:
1 lb Chicken- $1.59 (from Fred Meyer two weeks ago)
Swiss Cheese- FREE (Kraft 2% Naturals Cheese from Albertsons through Tuesday using a double coupon)
Cream of Mushroom Soup- FREE (from Albertson’s doublers a while back)
Sour Cream- $1.40 (Daisy Sour Cream is a part of the Kraft promo at Albertson’s this week)
Butter- $0.19 (Tillamook butter was $1.50 a lb at Fred Meyer about a month ago. I used 1/8 of a lb)
Bread Crumbs- $0.25 (Estimate. I keep this as a staple in my pantry)

TOTAL: $3.43

BBQ Pork

1 Pork Roast
1 jar BBQ Sauce
1 can Coke (or Diet Coke)

Put all ingredients in crock pot and cook for 4 hours on high or 6-8 hours on low. Shred before serving and drain off any excess “juice”.

Serve the pork on buns for sandwiches or it would be yummy in some of those FREE Mission Tortillas we have been able to get recently.

Note: This same recipe also works great for yummy ribs.

2 lb Pork Roast- $1.76 (It was on sale at Albies for $1.88/lb last week. I used a $1 off Hormel coupon and a doubler to take off $2!)
Kraft BBQ sauce- FREE (I think every one of us should have some of this laying around…)
1 can Diet Coke $0.10 (I stocked up on soda a few weeks back and got a 12 pack for $1.25)

TOTAL: $1.86
