Egg Free Pancakes

We wanted pancakes for breakfast but didn’t have any eggs.  Then I found this recipe for eggless pancakes.  They were actually pretty good.  I was skeptical, but I think with the extra baking powder, it makes them light and fluffy.  Not a bad option when you don’t have any eggs on hand 🙂

Makes about 24 average sized pancakes, with ingredients we all usually have on hand.

INGREDIENTS:

2 cups all-purpose flour

4 teaspoons baking powder

2 teaspoons sugar

1/4 teaspoon cinnamon

2 cups milk

2 tablespoons water

3 tablespoons canola oil

1/4 teaspoon vanilla

DIRECTIONS:

Mix all the dry ingredients.

Add the milk, water, oil, and vanilla.

Mix well, but don’t over stir; a few lumps are okay.

Make pancakes as you normally would on a hot griddle.
