Fragrant Thai Meatballs


After making the Thai Noodle Bowls, I had a lot of the ingredients left over, and I didn’t want the fresh perishables to go to waste.  I wanted to mimic the flavors that we had in the soup, and these Thai meatballs were excellent!  Oh my.  They were packed full of flavor, and nice and moist, everyone loved them.  I adjusted them and added a few extra flavors, but omitted the green curry paste.  They paired nicely with the Thai Fried Rice that I made to go with them.  I will be making these again for sure!  Makes about 24 meatballs, depending on the size you prefer.

NOTE: The recipe has been adapted quite a bit from the original.

Serves 4-6 for about $0.78/serving

1 lb. ground beef or turkey – $3.04

2 cloves garlic, minced

1 stalk lemon grass finely chopped – $0.25

2 green onions, finely chopped – $0.14

2 Tbsp chopped cilantro

1/4 red bell pepper, finely diced – $0.22

1/4 cup bread crumbs

1 Tbsp Lime juice

1 Tbsp fish sauce

1 egg – $0.10

salt and pepper to taste

Combine all ingredients.

My meat mixture was a bit too moist, so I added about 1/4 cup of bread crumbs to it.

Form into balls.  Bake at 400 degrees for 20-25 minutes.
