Fruity Candied Popcorn

We were itching for a quick treat, and this seemed to fit the bill.  Super simple, and pretty tasty too.  You could make all different flavors/colors and mix them all together.  A cute gift, or a fun Valentine’s Day treat!  Though, I would maybe add a couple drops of food coloring to make the colors a bit more vibrant…hard to tell that it was green.

 Serves 12 for about $0.17/serving

12 cups popped popcorn – $0.32
1 (14 oz.) can Sweetened Condensed Milk – $1.18
1 (3 oz.) package Jell-o – $0.54

Heat oven to 300ºF. Line large shallow roasting pan with heavy foil, extending foil over edges of pan. Grease foil. (I just greased a 9×13 dish, without foil in it, worked just fine.)

Pour popcorn into prepared pan. Keep warm in oven.

Heat and stir over low heat until mixture is slightly thickened and bubbly, 4 to 5 minutes. (for easy clean up soak in hot water immediately)

Pour mixture over popcorn. Stir gently to coat using a long-handled wooden spoon. Bake 20 minutes, stirring every 5 minutes. Carefully turn out onto large piece of lightly buttered foil, or on a silicon mat if you have one.  Let cool. Break into pieces or clusters.  Store in ziploc bag or airtight container…if you don’t eat it all!
