Garlic Cheese Muffins

Oh man, these looked good cooked, but when I made them, they were even better than I had imagined!  My brother and husband said they could replace the best dinner roll, biscuit, garlic bread, etc.  These covered the whole realm of tasty bread treats…and they really were that good!  They were a topic of conversation, of all the ways you could make them…use pepper jack cheese for a spicy kick, add some bacon and chives…oh the possibilities!!  I will warn you though, they are NOT a healthy option, but man, are they good!  So good we had them twice this week, and will be making them again to take to a dinner party this weekend.

Serves 12 for about $0.28/muffin

INGREDIENTS:

1 1/2 Cup Flour

1/2 Tbls sugar

1 Tbls baking powder

1/2 tsp salt

3 Cups cheese, shredded, I used Cheddar and Monteray Jack – $2.50

1 Cup milk – $0.12

1 egg – $0.12

1/4 Cup unsalted butter, melted – $0.24

Garlic Glaze:

1/2 Cup unsalted butter, melted – $0.48

1/2 tsp garlic powder

1/4 tsp salt

1/8 tsp onion powder

DIRECTIONS:

Preheat oven to 375 degrees.

Whisk dry ingredients together and stir in cheese.

In a separate bowl, whisk together egg, milk and butter.

Pour this over the wet mixture and combine thoroughly with a spoon or fork.

Evenly distribute mix in a WELL greased muffin tin. This makes 12 large muffins.

Bake for 20-25 minutes until golden brown on top.

Garlic Glaze:

Melt the butter, add remaining ingredients and stir to combine.

When muffins are straight out of the oven brush, evenly with glaze.

  2. They are amazing, we have made them 3 times this month!! Made a triple batch of them tonight as part of Christmas dinner, and there were only a few left…yummy!!
