Gooey Butter Cake


Oh man, this was good!  We typically go for chocolate based desserts around our house, but I have seen many recipes for this cake, as well as had a great Butter Cake at a local restaurant.  Pairing this with a scoop of vanilla ice cream made it quite the tasty treat!  I think it may be really good with a Lemon cake as a base, as the top layer, with the cream cheese, kind of tastes lemony to me.  I will have to give it a try…

Serves 12-16 for about $0.35/serving

1 box yellow cake mix – ($0.98)
3 eggs – ($0.30)
8 oz cream cheese, softened – ($1.28)
1/2 cup (1 stick) butter, melted ($0.48)
4 cups (1 lb) powdered sugar


Preheat oven to 300 degrees and spray a 9×13 dish with cooking spray.

Mix cake mix, melted butter and one egg to a soft dough. Press into the bottom of the pan.

Mix powdered sugar, softened cream cheese and remaining two eggs until smooth, about 1-2 mins. Pour on top of crust.

Bake for 40-50 minutes until top is golden brown.
