Greek Pasta Salad

It has been toasty warm here lately, and cooking in a hot kitchen is the last thing I feel like doing by the end of the day.  So this night we barbequed up some more of that bacon wrapped chicken, and had a tasty Greek inspired pasta salad along with it.   It hit the spot on a hot day, and all I had to do was cook the noodles and prep the other ingredients…no slaving away in a hot kitchen!  The nice thing about this salad, is you can switch it up to your own personal tastes.  We don’t really care for tomatoes in our home, but you sure could certainly add them to it!

Serves 10-12 for about $0.45/serving

INGREDIENTS:

1 lb. pasta of choice – ($0.98)

3/4 of large cucumber, sliced and quartered – ($0.78)

1 small jar artichoke hearts, chopped, and reserve juice – ($1.08)

1 can olives, sliced – ($0.98)

red onion, sliced thin (or pickled onions) – ($0.33)

1/2 cup crumbled feta cheese – ($0.75)

salt, pepper, oregano, garlic to taste preference

Cook pasta according to package directions.  Prep all other ingredients and place in a large bowl, along with juice from artichokes, except for feta and seasonings.  When pasta is cooled, add to veggies and mix well.

Top with feta and seasonings, and combine.  Chill for an hour or so before serving…overnight would be better to combine all the flavors.
