Grilled Bacon Wrapped Cabbage

For Mother’s Day this year, we decided to BBQ.  When I say we, it is because my husband is not much of a cook, but he can definitely man the grill.  Since I didn’t want to have to do all the work, I made some easy side dishes, and he handled the rest.  We happened to have a half a head of cabbage, and needed to use it up.  Since we were grilling, why not throw the cabbage on the grill?!  I had seen quite a few recipes for bacon wrapped cabbage on the grill, but none that really were what I wanted, so I kind of made up my own.  So easy, and super tasty!  Next time we will put the cabbage on a part of grill that isn’t as hot, so the bacon will crisp up all the way around and not just on one side, but it definitely was tasty, and so easy.

INGREDIENTS:

1/2 a head of cabbage cut into 4 wedges

4 slices bacon

butter

seasonings of choice

salt and pepper

DIRECTIONS:

Lay out 2 sheets of tin foil.  Place 2 wedges on each sheet of foil.  Wrap each wedge with a slice of bacon.

Put a pad of butter on top of each wedge (or drizzle with olive oil).  Sprinkle on seasonings.

Wrap up wedges in the foil, and place on grill for about 15-20 minutes, or until fork tender.
