Italian Sausage and Kale Soup


I know July is in full swing, but my cousin gave me this recipe for a soup that his wife makes, and I could NOT get it out of my head, it sounded SO good! (1 Large russet potato diced; 1 bunch kale, chopped; 2 stalks celery, sliced; 1 large onion, diced; 2-3 bouillon cubes; Place ingredients in crock pot, cover with water, and cook on low 5-6 hours.)   It was pretty rough around the edges on amounts and such needed, but I knew the recipe itself was probably fabulous, but it also kind of needed a bit something more to complete it.  I had made up a whole new recipe in my head, and for a week or so it haunted me.  I was bummed in thinking I would have to wait till the Fall to make it, till it was soup season again, but alas, we got a break from the warm summer days, with a few days in the 60’s and 70’s…perfectly cold enough for soup!  Since you throw this in the crock pot, it is super simple, and doesn’t heat up the house either.  Of course the temperatures jumped right back into the high 80’s the next day, but I got my soup, and we just froze the rest…an instant meal for when cooler weather comes again.  Here is the recipe that I made.  This is also what I love about soup, you can do to it whatever you want, make it your own!  Love it!

Serves 8-10 for about $0.60/serving



4 small russet potatoes (reds would be good too) – ($0.26)

1 large onion – ($0.33)

1 large bunch of Kale – ($1.68)

3-4 stalks celery – ($0.44)

5 chicken bouillon cubes

1 lb. ground Italian sausage – ($2.28)

1 can white beans – ($0.89)



Start by browning your sausage.  While it is browning, peel and dice your potatoes, dice onion, chop kale, and slice celery.


Place all ingredients in crock pot.


Cover with water and stir to combine ingredients. Cook on low for 5-6 hours.  Serve with a nice crusty bread.
