Ingredients:

10 oz frozen corn
1 can black beans, drained and rinsed
1 can black eyed peas, drained and rinsed
1/2 cup red bell pepper, diced
1/2 cup green bell pepper, diced
1 cup chopped celery
3/4 cup chopped green onion
1 cup chopped white onion
3/4 cup apple cider vinegar
3/4 cup olive oil
1 cup sugar
Salt and pepper

Ingredients:

5-6 roma tomatoes, diced
1 (15 oz) can black beans, drained and rinsed
1 (14 oz) can corn, drained
½ medium onion, diced (I used a purple onion)
1 avocado, diced
1 green bell pepper, diced
2 tablespoons diced jalapenos (more or less, depending on how hot you prefer it)
½ teaspoon garlic powder
¾ cup Italian dressing (I used Wishbone Robusto Italian)
½ cup fresh cilantro, chopped

Ingredients:

28 small red potatoes, (about 3/4 pound)
1/2 cup plus 2 tablespoons milk
1 tablespoon butter, plus 2 tablespoons for brushing
1/4 cup creme fraiche
Salt and freshly ground black pepper
1 tablespoon fresh chives, plus more for garnish
3 ounces sevruga, ossetra, or American sturgeon (paddlefish) caviar, (about 1/4 teaspoon per potato)

Timbale of Osetra Caviar, Crabmeat, and Avocado

Ingredients:

¼ cup jumbo lump crabmeat
¼ tsp. minced peeled shallot
½ tsp. fresh lemon juice
1 ripe hass avocado, halved lengthwise and pitted
1½ oz. osetra caviar
Salt and freshly ground white pepper

Ingredients:

2 (15-ounce) cans black-eyed peas, rinsed and drained
1 (15-ounce) can black beans, rinsed and drained
2 (15-ounce) cans yellow corn, drained
1 red bell pepper, cored, seeded, and finely chopped
½ green bell pepper, cored, seeded and finely chopped
1 small red onion, finely chopped
2 stalks celery, finely chopped
2 roma tomatoes, finely chopped
2 jalapeno peppers, seeded and finely chopped
⅓ cup chopped cilantro leaves
½ cup red wine vinegar
2 teaspoons sugar
½ teaspoon garlic powder
½ teaspoon salt
¼ teaspoon ground black pepper
¼ cup vegetable oil
