For the Cookies:
1 cup granulated sugar
1/2 cup unsalted butter, room temperature
3/4 teaspoon salt
1/2 teaspoon baking powder
1 teaspoon espresso powder (granules)
1 large egg
1 teaspoon vanilla extract
1 1/2 cups unbleached all-purpose flour
1/4 cup Special Dark Chocolate Cocoa
1/4 cup Dutch-process cocoa

(I halved the filling as I only had 15 cookies left from the original batch – making three cake stacks)
2 cups heavy whipping cream, very cold
2 tablespoons Dutch-process cocoa
2 tablespoons granulated sugar
1 teaspoon espresso powder / granules
Line two or more baking sheets with parchment paper.

8 oz Baker’s Semi Sweet Baking Chocolate (8 squares)
1/4-1/2 tsp peppermint extract (or oil)

For the Cookies:
6 Tbsp butter, softened
6 Tbsp margarine, softened
1 1/4 cup brown sugar
1 cup granulated sugar
1 Tbsp vanilla
1 egg
2 cup flour
1 cup cocoa powder
1/2 tsp baking soda
1/2 tsp salt
For the Vanilla Cream:
1/4 cup butter, melted
1/4 cup butter flavored Crisco
2 cup powdered sugar
1 tsp vanilla (clear if possible)
1 1/2 Tbsp heavy cream
For the Chocolate Mocha Filling:
1/4 cup butter
1/2 cup milk chocolate morsels
1 1/3 cup powdered sugar
1 tsp vanilla
2 Tbsp brewed coffee

3 cups of heavy whipping cream, preferably organic
4 teaspoons granulated sugar
1 tablespoon vanilla extract
2 9-ounce boxes of Nabisco Famous Chocolate Wafers
shaved chocolate, chocolate sprinkles, cocoa powder, or tiny chocolate chips as a garnish

½ c. butter, melted
1 can sweetened condensed milk
4 drops green food coloring
1½ c. Lucky Charms
1 c. mini marshmallows
1 c. white chocolate chips
1 c. coconut
