Grab your chopsticks, or just use your hands and enjoy these sushi recipes!

1. Dragon Roll

Sushi Rice

Ingredients:

About 6 cups prepared sushi rice
1 Japanese cucumber
4 avocados
½ lemon
4 nori sheets, cut in half crosswise
16 shrimp tempura* (See the recipe here)
⅛ cup (20oz) Tobiko
Unagi (eel) – optional
For toppings
Spicy Mayo (recipe here)
Unagi Sauce (recipe here)
Black sesame seeds (optional)
Vinegar water for dipping hands (Tezu)
¼ cup water
2 tsp. rice vinegar
Things you will need
Bamboo sushi mat
Plastic wrap

2. Volcano Roll

Ingredients:

for the rolls:
1 heaping cup of cooked sushi rice [short-cut stye or regular]
2 sheets of nori
4-6 green onion stalks [plus extra to garnish]
¼ of an english cucumber or about ⅓ of a regular cucumber, peeled + sliced
2 tablespoons of cream cheese [optional]
1 tablespoon of toasted sesame seeds [optional]
a sprinkle of salt + sugar and a splash of vinegar [rice or white] to season the rice

volcano topping:
8 jumbo shrimp [raw, defrosted, and cleaned/deveined] or
4 ounces of raw salmon or
4 ounces of raw bay or sea scallops

volcano sauce:
⅔ cup of fresh or store bought mayo
2 tablespoons sriracha chili sauce
whisk together and adjust spice/heat as needed

tools needed:
a bamboo mat to roll the sushi
saran/plastic wrap to protect the mat from sticky rice [optional but easy to clean!]
aluminum foil for the seafood
a spoon or fork to spread the rice

3. Godzilla Rolls

Ingredients:

Sushi Rice
Nori (dry roasted seaweed), 1 sheet
2-3 pieces shrimp tempura
2 slices avocado
3-4 tsp (or so) cream cheese (use the block cream cheese and cut into a couple long, rectangular slices)
½ c. flour
tempura batter
oil for frying
*Spicy mayo

4. California Rolls

California Rolls

Ingredients:

4 cups cold water
3⅓ cups Japanese short-grain rice
1 piece dashi kombu
5 tablespoons white sugar
⅓ cup rice vinegar
1 tablespoon plus ½ teaspoon salt
1 package unseasoned sheet nori
1 avocado, cut into thin strips and sprinkled with lemon juice
4 oz lump crabmeat
3 oz top quality skinless salmon filet

5. Sushi Roll- Tempura Shrimp

Sushi Roll- Tempura Shrimp

Ingredients:

1.25 cups Sushi Rice, with rice vinegar
6 medium Panko crusted shrimp, cooked
3 sheets nori
1/4 cucumber, thinly sliced, long
shredded carrot
wasabi mayo (light mayo, light sour cream, wasabi) to add zest to the rolls
