Talk about comfort food? Tapioca is cultivated in many countries around the world. This recipe is quick and easy to prepare and very delicious! Enjoy!

1. Raspberry Honey Tapioca

Raspberry Honey Tapioca

Ingredients:

3 cups / 710 ml milk
1/3 cup / 2.5 oz / 70 g small pearl tapioca
2 large egg yolks, lightly beaten
1/4 tsp fine-grain sea salt
1/3 cup / 80 ml mild honey
Grated zest of 1 small lemon
1/4 to 1 tsp rose water
Chopped toasted pistachios or sliced raspberries to garnish

2. Pineapple-Coconut Tapioca

Pineapple-Coconut Tapioca

Ingredients:

Cooking spray
3/4 cup sugar
1/2 cup regular small pearl tapioca
2 (13.5-ounce) cans light coconut milk
1 large egg
1/2 cup finely chopped fresh pineapple
1/2 cup flaked sweetened coconut, toasted

Coconut Tapioca Pudding with Toasted Coconut Chips

Ingredients:

2 cups almond milk, divided
1/3 cup tapioca pearls
1 cup coconut milk
1/4 cup maple syrup (or agave syrup – you could also use honey if you aren’t vegan)
1 teaspoon vanilla extract
1 teaspoon tapioca starch with 1 tablespoon water mixed in
1/4 teaspoon sea salt
Toasted coconut chips for garnish

Ingredients:

3 cups water
1 package (3 ounces) orange gelatin
1 package (3.4 ounces) instant vanilla pudding mix
1 package (3 ounces) tapioca pudding mix
1 can (15 ounces) mandarin oranges, drained
1 can (8 ounces) crushed pineapple, drained
1 carton (8 ounces) frozen whipped topping, thawed

Vegan Raspberry Tapioca Pudding

Ingredients:

2 cups almond milk, divided
1/3 cup small pearl tapioca
13 oz can coconut milk (be sure to look for the can, not the coconut
beverage that comes in a carton)
1/3 cup agave syrup
1 cup frozen raspberries
pinch of salt
optional: chopped pistachios & fresh raspberries, for garnish
