Kielbasa and Cabbage


This cabbage and kielbasa dish is so easy and super flavorful!!  I will be making this again in the near future for sure.   A quick and easy 1 pot dish.  We ate it with rice as a side, but mixed together it was great too!  Makes for tasty leftovers as well.

Serves 6-8 for about $0.80/serving

1  pound  kielbasa, sliced into 1/4-inch-thick slices, and then halved – $2.98
1  medium-size cabbage (about 2 1/2 pounds), chopped into bite-size pieces – $2.04
1  (14.5-ounce) can diced tomatoes (with green peppers and onions), undrained…I used a can of rotel – $0.98
1  teaspoon  salt
1/2  teaspoon  pepper

Sauté kielbasa in a large nonstick skillet over medium-high heat until browned. Remove sausage with a slotted spoon, and drain on paper towels, reserving drippings in skillet. Set aside.

 Stir in cabbage; cover and cook, stirring occasionally, 15 minutes or until vegetables are tender.

Stir in cooked sausage, tomatoes, salt, and pepper. Cook until thoroughly heated.
