Leek and Potato Soup


My friends Mom used to make this all the time when I was younger, and I refused to try it.  One day, when I was much older, I decided to give it a shot.  Oh how I wish I had tried it sooner, it is a favorite of mine…and would be so good with some crumbled up bacon or pancetta in it as well, though I still have not tried that yet.  It is a filling, eat on a cold day meal, with some warm crusty bread.

Serves 6-8 for about $1.00/serving

1 bunch of leeks, sliced and cleaned well – ($2.78)

2 lbs. potatoes, peeled and diced – ($0.79)

2 onions, diced – ($0.66)

6 branches of celery, sliced – ($0.89)

salt and pepper to taste

4 cups chicken or veggie broth – ($1.36)

Half and half – ($0.44)

1/4 cup butter – ($0.25)

When you slice up leeks, you find all sorts of dirt and grit in there.  You need to clean them really well.  I have found that slicing them, and then rinsing and straining them works really well.

Saute diced veggies, except for the potatoes, in the butter until they are soft.

Add broth and potatoes, and simmer for 1 1/2 hours.

Add Half and half until consistency of a cream soup.  Season with salt and pepper.
