Lemon Poppy Seed Cake


Another oldie but goodie from growing up, Lemon Poppy Seed Cake.  Light and refreshing, and so moist, with a bit of sweet and sour glaze, yum!!  You can easily serve 8-10, for just a few bucks.

Lemon Cake Mix – $0.98

4 eggs – $0.40

1/2 cup oil

1 cup water

1/4 cup Poppy Seeds

1/3 cup Powdered sugar

1/4 cup lemon juice

(Oops!  Accidentally added 2, but it is fine…)

Mix together all ingredients except powdered sugar and lemon juice, adding one egg at a time.

Spray bundt pan, and pour batter into pan.

Bake for about 40 minutes at 350 degrees.

When cake has cooled, combine powdered sugar and lemon juice, a little bit at a time, until you get the right consistency.  You don’t want it too thick, or too runny.


You want a nice drizzle over the cake.
