Artichoke recipes require a bit of prep work! But… you will love the result 🙂
Once you get used to it, the process goes much faster the next time. So here are some artichoke recipes for you!

1. Spinach And Artichoke Stuffed Mushrooms

Spinach And Artichoke Stuffed Mushrooms

Ingredients:

6 stuffing portabella mushrooms (6 oz)
¼ cup chopped onion
1 garlic clove, minced
1 cup fresh spinach, packed
½ cup canned artichoke hearts (about 3 hearts), chopped
1 tbsp cream cheese
1-2 oz goat cheese (or parmesan/mozzarella cheese)
salt and pepper, to taste

Ingredients:

1 pound of [pizza dough|http://www.halfbakedharvest.com/thai-pizza/]
1/4 cup olive oil
3 large cloves garlic, minced
1 tablespoon fresh lemon juice
1 teaspoon dried basil
1 teaspoon freshly ground black pepper
1/2 teaspoon salt
1 package (10 ounces) frozen spinach, thawed and drained
2 cups (about two 7 ounce jars) marinated artichoke hearts, drained
4 ounces (about 1 cup) fresh mozzarella, sliced thin or grated
2-4 ounces blue cheese, broken into chunks
2 tablespoons pine nuts
2 tablespoons fresh basil, for garnish

Ingredients:

16 oz frozen or canned artichoke hearts
2 Tbsp olive oil
1–2 cloves garlic, minced
1 tsp sea salt plus more for sprinkling
pepper or red pepper flakes to taste
lemon wedges

4. Chicken & Artichokes in Wine Sauce

Ingredients:

2 cups artichoke hearts, frozen and thawed, or canned and drained
2 boneless skinless chicken breasts, about 1 pound
1 1/2 cups flour
Salt and freshly ground black pepper
2 tablespoons unsalted butter, divided
2 tablespoons olive oil, divided
2 cups dry yet mellow white wine, such as Chardonnay
1/2 lemon
Flat-leaf (Italian) parsley, to garnish (optional)

5. Fettuccine with Wild Mushrooms & Artichoke Hearts

Fettuccine with Wild Mushrooms & Artichoke Hearts

Ingredients:

1 Package Fettuccine Noodles (It was kinda hard finding Vegan Fettuccine noodles, but I did! I can usually find vegan Linguine though, and I think it would be just as lovely.)
1 Variety Pack of Fresh Wild Mushrooms (They usually sell these in the produce section, but if you can’t find one, you can use about 1-2 ozs of your favorite Fresh Mushroom. I think the Portabellas had the nicest flavor if you would like a suggestion.)
1 Can Artichoke Hearts (drained)
1 Can Garbanzo Beans (rinsed and drained)
2 Tablespoons Margarine
1 Tablespoon Olive Oil
1/4 Cup White Wine
2 Cloves Garlic (minced)
2 Teaspoons Braggs
1 Teaspoon Herbs De Provence
1/4 Teaspoon Ground Black Pepper
1/4 Teaspoon Garlic Powder
2 Teaspoons Fresh Parsley (diced)
1/2 Teaspoon Fresh Thyme
Vegan Parmesan Cheese to sprinkle over the top

Ingredients:

Canola oil, for frying
2 (14-oz.) jars artichoke hearts
8 slices bacon, halved crosswise
â…“ cup freshly grated Parmesan
1 tbsp. ground black pepper

Lemon Chicken with Artichoke Hearts

Ingredients:

2 pound boneless skinless chicken breast (slice the breast into two ½-1 inch fillets)
1 can or jar of artichoke hearts (cut into quarters)
â…” cup dry white wine
â…“ chicken or vegetable stock
2-3 teaspoons fresh lemon juice
Extra virgin olive oil
1 bunch of parsley, finely chopped
Kosher salt and freshly ground black pepper to taste
2-3 tabs of butter
½ cup of flour

8. Hearts of Palm, Artichoke, Avocado and Butter Lettuce Salad

Hearts of Palm, Artichoke, Avocado and Butter Lettuce Salad

Ingredients:

1 (14-ounce) can small artichoke hearts in water, drained
1 (14-ounce) can hearts of palm, cut into medium chunks, drained
½ English cucumber, thinly sliced
½ small red onion, finely chopped
½ poblano pepper, seeded, ribbed, and finely chopped
1 head butter lettuce, rinsed, dried and chopped
1-2 avocados, cut in large chunks
3 tablespoons champagne vinegar
3 tablespoons olive oil
Salt and freshly ground black pepper
