1. Peanut Butter Oatmeal Cookies

Ingredients:

3/4 cup butter, room temperature
1 cup packed dark brown sugar
1/2 cup granulated sugar
1/2 cup creamy peanut butter
2 eggs
1 teaspoon vanilla
2 cups oats (I used quick oats, not rolled)
1 1/2 cups flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon cinnamon
1 cup golden raisins

2. Carrot Cake Oatmeal Cookies

Carrot Cake Oatmeal Cookies

Ingredients:

1 c (98g) instant oats (gluten-free if necessary)
¾ c (90g) whole wheat or gluten-free* flour (measured correctly)
1 ½ tsp (5g) baking powder
1 ½ tsp (3g) ground cinnamon
1/8 tsp (1g) salt
2 tbsp (28g) coconut oil or unsalted butter, melted and cooled slightly
1 large egg, room temperature
1 tsp (5mL) vanilla extract
½ c (120mL) maple syrup
¾ c (68g) grated carrots (about 1 smallish medium)

¾ c (90g) whole wheat flour (measured correctly)
1 ½ tsp (4g) baking powder
1 ½ tsp (4g) ground cinnamon
1/8 tsp (1g) salt
2 tbsp (28g) coconut oil or unsalted butter, melted
1 large egg, room temperature
1 tsp (5mL) vanilla extract
½ c (120mL) agave
¼ c (40g) raisins

Ingredients:

1 large egg
1/2 cup unsalted butter (1 stick)
1/2 cup light brown sugar, packed
1/4 cup granulated sugar
1 tablespoon vanilla extract
1 cup old-fashioned whole rolled oats (not instant or quick cook)
1 cup all-purpose flour
1/2 cup sweetened shredded coconut
1/2 cup chopped walnuts (pecans may be substituted; or nuts may be omitted)
1/2 teaspoon baking soda
1/4 teaspoon salt, or to taste
1 heaping cup semi-sweet chocolate chips

½ teaspoon salt
2 teaspoons cinnamon
½ teaspoon ground nutmeg
1 cup unsalted butter, room temperature (2 sticks)
1 cup light brown sugar, packed
½ cup granulated sugar
2 large eggs, room temperature
1 teaspoon pure vanilla extract

FOR THE ICING:
3 tablespoons heavy cream
2 tablespoons warm water
2 cups confectioners’ sugar

2 tbsp (28g) coconut oil or unsalted butter, melted
1 large egg, room temperature
1 tsp (5mL) vanilla extract
½ c (120mL) agave
1 c (125g) finely diced red apple (about 1 medium)

3/4 cup (150g)dark brown sugar, packed
1/4 cup (50g) granulated sugar

2 teaspoon vanilla extract
1 and 2/3 cups (140g) old-fashioned rolled oats
1 cup (125g) all-purpose flour
1/2 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup (160g) mini M&Ms (or regular size)

Ingredients:

1/2 cup (1 stick/113 grams) of unsalted butter
1/3 cup (71 grams) of granulated sugar
1/3 cup (63 grams) of dark brown sugar
1 large egg
1 tsp of vanilla extract
3/4 cup (101 grams) of all-purpose flour
1/2 tsp of salt
1/2 tsp of ground cinnamon
1/4 tsp of baking soda
1 1/2 cup (136 grams) of quick-cooking oats
1/2 heaping cup (85 grams) of chopped semi-sweet chocolate
1 cup (125 grams) of frozen blueberries
