It’s National Melba Toast Day! A very favorite breakfast food. It’s very simple and it comes out like a crouton cracker. Go ahead and check out these recipes I prepared for you because they’re all good!

1. Easy Spinach & Veggie Dip with Old London Melba Toasts

Easy Spinach & Veggie Dip with Old London Melba Toasts

Ingredients:

10 oz spinach, cooked, cooled and squeezed dry, then chopped
1 container (16 oz.) sour cream (or you can substitute greek yogurt!)
1 cup mayonnaise
1 package Knorr® Vegetable recipe mix
1 can (8 oz.) water chestnuts, drained and chopped (optional)
3 green onions, chopped (optional)
1 package Old London Melba Toasts

cocktail rye bread (other cocktail bread is fine as well)
olive oil as needed
garlic powder or other seasonings (optional)

500 g banana prawns or medium raw Crystal Bay prawns
1 tsp lemon zest, finely grated
125 g butter
3 spring onions, finely sliced
pinch ground nutmeg
1 tsp dill, finely chopped
sprigs dill, to garnish

Stuffed French Toast Melba

Ingredients:

4 ounces Neufchatel cheese, softened
1 tablespoon confectioners’ sugar
1 pint fresh raspberries (about 2 cups)
1 cup chopped fresh peach
8 slices Pepperidge Farm® Whole Grain 100% Whole Wheat Bread
1 cup cholesterol-free egg substitute
1 cup fat-free milk
1 teaspoon vanilla extract
1 cup pure maple syrup
