Hello yum! You’ll love these Coquilles St-Jacques recipes! It’s an easy to make for lunch or dinner.

1. Coquilles St-Jacques (Gratinéed Scallops)

Ingredients:

¾ cup dry vermouth
1 bay leaf
1 large shallot, quartered
Kosher salt and freshly ground white pepper, to taste
18 medium sea scallops
8 tbsp. unsalted butter
16 oz. button mushrooms, sliced ¼″ thick
3 tbsp. flour
½ cup heavy cream
½ tsp. fresh lemon juice
1½ cups grated Gruyère

Ingredients:

900g shelled scallops
350ml fish stock
½ bottle (375ml) white wine
350g button mushrooms, trimmed and quartered
juice of ½ lemon, more to taste
2 tbsp toasted breadcrumbs
1 tbsp melted butter
For the duchesse potatoes
1½ kg floury potatoes, such as Kind Edwards or Maris Piper, each cut in 2-3 pieces
85g butter
large pinch of grated nutmeg
6 egg yolks
For the sauce
2 shallots, finely chopped
65g butter
35g plain flour
125ml crème fraîche or double cream
8 large scallops shells or shallow individual baking dishes

Ingredients:

For the Sauce
1 small onion, finely chopped
3 tbsp spelt flour
1½ cups milk
1 tsp Dijon mustard
¼ tsp salt
¼ tsp black pepper
few grinds fresh nutmeg
1 tbsp dried parsley
1 can baby clams, drained

The Seafood
125g fresh salmon fillet, skin removed and cut into 1″ chunks
16 large shrimp, cleaned and tail removed (size 26-30)
4 giant scallops, patted dry (about 50g each)

For the Mashed Potatoes
4 medium potatoes, peeled and cut in 2″ pieces
1/3 cup fat free plain Greek yogurt
2 tbsp buttermilk
¼ tsp salt
¼ tsp black pepper
Few grinds fresh nutmeg

For the Gratin
70g light Swiss cheese, grated

Ingredients:

8 tablespoons unsalted butter, divided
¼ cup all-purpose flour
1 ½ cups seafood stock, clam juice or low-sodium chicken stock
1 cup heavy cream
¼ teaspoon curry powder
Kosher salt and freshly ground black pepper, to taste
3 large shallots, peeled and diced, approximately 1 cup
12 ounces cremini mushrooms, cleaned, stems discarded, sliced
¼ cup brandy or Cognac
1 ½ cups fresh bread crumbs (approximately 6 slices white bread, crusts removed, finely chopped or pulsed in a food processor)
¼ cup minced flat-leaf parsley
5 ounces Gruyère cheese, grated
