There are many ways to prepare Escargot. Garden Snails can be a source of protein, preparing it is no easy task but you will love it the result for sure!

1. French Recipes: Escargot Stuffed Mushrooms

French Recipes Escargot Stuffed Mushrooms

Ingredients:

8 tablespoons unsalted butter at room temperature
1 clove garlic
1 teaspoon chopped shallots
1 tablespoon chopped celery
1 tablespoon parsley
1 teaspoon fresh lemon juice
dash of hot sauce
salt and pepper to taste
12 large white button mushrooms
1 can of 12 escargot, rinsed and drained

2. Escargot Vol-au-Vent

Escargot Vol-au-Vent

Ingredients:

4 to 5 garlic cloves, peeled and finely minced
2 teaspoons kosher salt
8 ounces unsalted butter, at room temperature
1/2 cup finely minced Italian parsley
1/2 cup finely minced chives
2 tablespoons minced shallots
Pinch of freshly grated black pepper
1 tablespoon fresh lemon juice
1 tablespoon Pernod
24 “very large” top-quality canned snails, drained
1 sheet puff pastry, homemade or store-bought.

3. Escargot and Angel Hair

Ingredients:

1 tablespoon olive oil
1 tablespoon butter
4 garlic cloves, crushed
3 shallots, finely chopped
1 cup chopped mixed mushrooms
1⁄4 cup slivered roasted red pepper
1⁄4 cup chicken broth
1⁄4 teaspoon salt
1⁄4 teaspoon peppercorn, freshly ground
1 (200 g) can escargot, drained
2 tablespoons parmesan cheese, shredded
3 cups angel hair pasta

4. Gratinated Escargots in Marble Potato

Gratinated Escargots in Marble Potato

Ingredients:

12 piece Escargots drained, washed
12 piece marble potatoes cooked al dente
10 grams shallots finely chopped
5 grams garlic clove finenely chopped
10 millilitres Pernod alternatively Ricard or Pastis
10 millilitres dry white wine
20 millilitres virgin olive oil
pepper from the mill
sea salt flakes
Escargot butter – yield 2 cups
240 grams butter soft
1 piece egg yolk
15 grams garlic clove finely chopped
6 grams chive finely chopped
30 grams shallots finely chopped

5. Escargot Forestiere

Ingredients:

48 snails, canned
454 g of butter,softened
3 tbsp finely chopped chives
3 tbsp finely chopped parsley
5-7 cloves of finely chopped garlic
4 tbsp fine bread crumbs
2 tbsp white wine
2 tbsp Pernod
48 mushroom caps
salt and pepper to taste

Ingredients:

Smushed clove of garlic
1/2 stick of softened butter
big pinch of kosher salt
minced parsley
can of escargot
garlic butter
cognac
