Ingredients:

Olive Oil- 1 tbsp.
Pancetta or Bacon lardons (cubed)- 120 gr/4 oz.
Chicken thighs and legs- 8-10 pieces
Onion- 1 large
Carrots- 2 medium
Garlic (chopped)- 1-2 cloves
Brandy or Whisky- 1/4 cup
Red Wine (your choice)-1/2 bottle
Chicken Stock- 1 cup
Thyme- 8-10 springs
Butter- 1 tbsp.
Flour- 1 1/2 tbsp for thickening (could substitute for corn starch for gluten-free version)
Mushrooms- 250 gr/ 1/2 pound
Salt and Pepper to taste

One-Pot 45 Minute Coq au Vin with Brown Butter Sage Mashed Potatoes.

Ingredients:

Coq au Vin
4 thick cut slices bacon, chopped
4 tablespoons olive oil, divided
salt and pepper, to taste
1 sweet onion, diced
4 cloves garlic, minced or grated
1 small sweet potato, chopped in 1/2 inch pieces (peeled if desired, I left mine on)
2 medium size carrots, chopped in 1/2 inch pieces
2 tablespoons tomato paste
1 1/2 pounds boneless chicken tenders or small chicken breasts (may sub thighs if desired)
2 cups button mushrooms, sliced
2 cups red wine, plus more if needed
2 cups chicken broth
2 bay leaves
4 whole sprigs fresh thyme
1/2 cup fresh parsley, chopped
Mashed Potatoes
4 large Idaho potatoes, peeled and quartered (I used Idaho, but you may sub Russet)
2-4 garlic cloves, peeled (I used 4)
salt
8 tablespoons unsalted butter, browned
8 fresh sage leaves, chopped
3/4 cup heavy cream

4 slices Bacon, Cut Into Small Pieces
1 whole Fryer Chicken
1/2 whole Medium Onion, Diced
1/2 cup Carrots, Washed, Peeled, And Roughly Chopped
5 cloves Garlic, Minced
2 Tablespoons Butter
1 pound White Mushrooms, Sliced
2 cups Burgundy Wine
1 pound Pasta (egg Noodles Or Fettucini)
2 Tablespoons Butter
Parsley, Fresh, Minced
Salt And Pepper, to taste

6 oz. thick-cut bacon, cut into 1/2-inch dice
3 1/4 lb. whole chicken legs
Kosher salt and freshly ground pepper, to taste
1 lb. small button mushrooms
3/4 lb. shallots, halved
1 Tbs. unsalted butter
3 garlic cloves, minced
2 Tbs. tomato paste
2 Tbs. all-purpose flour
1 3/4 cups chicken broth
3/4 lb. carrots, peeled and cut into 2-inch pieces

½ large yellow onion, finely diced
1 cup of finely chopped bacon
4 tbsp vegetable oil
3 garlic cloves minced
2 chicken thighs, 2 chicken legs
1 cup of Swiss brown mushrooms (Baby Bella mushrooms or Brown mushrooms), sliced
1 tbsp chopped thyme
1 tbsp chopped parsley
2 cups Riesling white Wine (a good wine that you like to drink as well)
¾ cup heavy cream
2 medium russet potatoes
2 tsp ground black pepper
Salt if needed, to taste.
